NCSU vs Carolina Game

Our friend Mark came to spend the night with us, so by the time he got to our place and all the supplies needed were shopped for, we made lamb kabobs til 2am and got up at 6:00am for tailgating for the NCSU vs Carolina game (State Won! 31-27). Gary and Mark sat together, and I sat with my friend Sean. I think I was holding my breath for the last minutes of the 4th quarter!

and since the skewers were so good, here is the marinade we used for you to try and for us not to lose! I think when we make the marinade again, I’m going to add a little brown sugar, but it was so yummy!

Persian Lamb Kebabs with Minted Pilaf

    Marinade

  • 1 small yellow onion
  • 1/4 cup organic extra virgin olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 tablespoons fresh lemon juice
  • 3/4 teaspoon ground cinnamon
  • 1 teaspoon oregano
  • 1 teaspoon garlic, minced
  • 1 small bay leaf, minced
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon paprika
  • Kebobs

  • 1 pound lean leg of lamb, cut into 1 1/2-inch cubes
  • 1 small yellow onion
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 8 large firm cherry tomatoes
  • Rice

  • 1 tablespoon organic extra virgin olive oil
  • 3/4 teaspoon garlic, minced
  • 1 cup basmati rice
  • 1 1/2 cups vegetable stock
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt
  • 1/2 tablespoon mint, minced

Grate one yellow onion, place in a fine mesh strainer, press out and save the juice. Set aside onion pulp for pilaf.

Combine onion juice, 1/4 cup olive oil, 1/4 teaspoon black pepper, lemon juice, cinnamon, oregano, 1 teaspoon garlic, bay leaf, cumin, paprika. Pour over the lamb and marinate 12 hours, stirring the meat occasionally.

Cut bell peppers into quarters length-wise, and remove the seeds. cut each piece into 3 cubes. Peel onion, cut in 4 wedges, cut each wedge in half. Separate into pieces 2 layers thick.

Alternate meat and vegetables on metal skewers.

Start charcoal.

Prepare pilaf: Heat 1 tablespoon olive oil and sauté the grated onion and 3/4 teaspoon garlic over medium heat for 3 minutes. Add basmati rice and stir. Add vegetable stock and bring to a boil. Add 1/8 teaspoons salt, reduce heat to low, cover, and cook 16–18 minutes or until all liquid is absorbed.

While rice is cooking, place kebabs over medium hot fire. Cook 15–20 minutes, turning to cook evenly. When the rice is finished cooking season with 1/8 teaspoon fresh ground black pepper, and mint. Serve kebabs over pilaf.

How did You Spend Your Halloween?

punkin.gifHalloween and really, the end of the month kind of snuck up on me.

I realized just last night that I forgot to get a pumpkin to carve, and I bought a carving set and a cute template to use towards the beginning of the month.

I really didn’t do anything halloween related last night. Instead it was dinner, shopping, movie, cake, home to bed, coughing, sleep – and now it’s November!

Surprise Cookie

Gary and I went to my parents house for dinner tonight and then we took them out to get dessert.  Gary went off to get me this cookie as a surprise . . . winnie the pooh . . .  and he was yummy 🙂

Fiesta for the Cure

Clay and Miranda’s Engagement Session

Our good friends Clay and Miranda got their engagement session done today. We didn’t get a chance to do one before the wedding, so we did one today, and it was so fun 🙂

We started on the NCSU Campus since that is where they met, and then we headed over to Pullen Park for a ride on the carousel!

@ the Fair with Friends

Gary and I met up with our friends Erich and Stephanie at the fair last night. There weren’t a lot of people out – we think because of the off and on rain during the day, but it was perfect from 8pm to midnight! So Gary won me a Hello Kitty by playing “whack a mole” and he had to hold it when I went on any rides, so Erich got this shot if him which is so cute!:

Gifts!

Gary was in Florida for the day for work on Tuesday and I was at the fair with Adrienne.  When I came home, look what Gary had for me!  He usually brings me back a little stuffed something with the name of the state he was visiting, but I had forgotten all about Transformers coming out on DVD yesterday!  Woohoo, date night movie!  And the two disc set, though it would have been neat if they had a transformer figurine that came with it 😀

Photos and Fireworks at the Fair!

Last night Adrienne and I went to the fair (2nd X for me) for a little shooting and a little food. We got there in the evening and stayed for the fireworks . . . we were going to try and get on the ferris wheel for them but we wouldn’t have made it in time and then we didn’t want to spend more money, so we found a nice spot on a grassy hill instead.

I would have photos up, but my laptop power cord died the other night, so I can’t do anything until my next day delivery package arrives with brand spankin’ new cord.
